INGREDIENTS
- Original Mary’s Gone Crackers
- ½ white onion, chopped
- 1 tbsp oil
- 3 pieces of thick cut bacon, chopped
- 1 tbsp brown sugar
- ¼ cup maple syrup
- 2 tbsp apple cider vinegar
- ¼ tsp black pepper
- ½ tsp chili powder
- Fresh thyme springs
- 4oz of brie
PREPARATION
Cook the Bacon Jam:
- In a pan over medium heat, add the oil and sauté the onions for 3-4 minutes until translucent.
- Add chopped bacon and cook for another 5 minutes.
- Add brown sugar, maple syrup, vinegar, black pepper and chili powder, drain out some of the bacon fat.
- Cook the ingredients over medium to low heat, watching carefully, for 20-25 minutes until a sticky and jammy consistency forms.
ASSEMBLE
- Add a small slice of brie on top of each cracker.
- Place it in the oven and broil for 2-3 minutes, watch carefully again, until melted.
- Spoon 1 teaspoon of bacon onion jam on top of the brie, then garnish with fresh thyme.
- Serve with a glass of Liquid Light Brut Rosé
