Baked Brie and Bacon Jam

Pair with Liquid Light Brut Rosé

INGREDIENTS

  • Original Mary’s Gone Crackers
  • ½ white onion, chopped
  • 1 tbsp oil
  • 3 pieces of thick cut bacon, chopped
  • 1 tbsp brown sugar
  • ¼ cup maple syrup
  • 2 tbsp apple cider vinegar
  • ¼ tsp black pepper
  • ½ tsp chili powder
  • Fresh thyme springs
  • 4oz of brie

PREPARATION

Cook the Bacon Jam:

  1. In a pan over medium heat, add the oil and sauté the onions for 3-4 minutes until translucent.
  2. Add chopped bacon and cook for another 5 minutes.
  3. Add brown sugar, maple syrup, vinegar, black pepper and chili powder, drain out some of the bacon fat.
  4. Cook the ingredients over medium to low heat, watching carefully, for 20-25 minutes until a sticky and jammy consistency forms.

ASSEMBLE

  1. Add a small slice of brie on top of each cracker.
  2. Place it in the oven and broil for 2-3 minutes, watch carefully again, until melted.
  3. Spoon 1 teaspoon of bacon onion jam on top of the brie, then garnish with fresh thyme.
  4. Serve with a glass of Liquid Light Brut Rosé
