Cauliflower Ceviche

INGREDIENTS

  • Super Seed Jalapeño Crackers
  • 3 medium tomatoes, diced
  • ½ small head of cauliflower, chopped into little cubes
  • Fresh lime juice (use 4 limes)
  • 1 jalapeño, minced
  • ½ red onion, chopped
  • ½ tsp salt
  • Black pepper to taste

PREPARATION

Combine all ingredients:

  1. Refrigerate overnight to marinate.
  2. The next day, taste the ceviche to see if you want to make any seasoning adjustments.

ASSEMBLE

  1. Serve on top of Mary’s Gone Crackers Super Seed Jalapeño Crackers
  2. Pair with a glass of Liquid Light Pinot Grigio.
