INGREDIENTS
- Original Mary’s Gone Crackers
- 4 rainbow carrots, diced
- 3 watermelon radishes, diced
- ½ red bell pepper, diced
- 8 stalks asparagus, diced
- 1 tbsp olive oil
- 1 tsp lemon juice
- ½ tsp salt
- Pepper to taste
- 4-6 chives, chopped finely
PREPARATION
Cook the Vegetables:
- Preheat oven to 400°.
- Wash and prepare the vegetables.
- Peel the carrots and watermelon radishes, then cut all vegetables down into small pieces (approx. one-quarter inch in size).
- Add all the chopped vegetables into a medium bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Spread the vegetables out on a baking sheet. Bake for 10 minutes.
ASSEMBLE
- Spoon the baked mixture on top of individual Original Crackers
- Top with chives
- Serve with a glass of Liquid Light Chardonnay.
