Rainbow Vegan Bruschetta

Pair with Liquid Light Chardonnay

INGREDIENTS

  • Original Mary’s Gone Crackers
  • 4 rainbow carrots, diced
  • 3 watermelon radishes, diced
  • ½ red bell pepper, diced
  • 8 stalks asparagus, diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ½ tsp salt
  • Pepper to taste
  • 4-6 chives, chopped finely

PREPARATION

Cook the Vegetables:

  1. Preheat oven to 400°.
  2. Wash and prepare the vegetables.
  3. Peel the carrots and watermelon radishes, then cut all vegetables down into small pieces (approx. one-quarter inch in size).
  4. Add all the chopped vegetables into a medium bowl. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  5. Spread the vegetables out on a baking sheet. Bake for 10 minutes.

ASSEMBLE

  1. Spoon the baked mixture on top of individual Original Crackers
  2. Top with chives
  3. Serve with a glass of Liquid Light Chardonnay.
